One of our most popular dishes here at Nourish is our fresh Toroi. This utilises kai whanau and kai moana to create a dish of fresh mussels and a broth known as Puha. This is infused with the juice of a dark green sow thistle with a milk white sap. The mussels used are the green-lipped variety kūtai. As we are passionate about environment here at Nourish its important to note kūtai is also an essential part of the ecosystem, serving as a natural filtration system for the seawater and a source of food for both people and animals.
Hāngī is unique in Māori culture because it refers to both a cooking method and a dish. Usually reserved for special occasions and celebrations, the process involves cooking via heated rocks covered with a damp cloth, all contained in an umu or underground oven, taking several hours, producing tender food through steaming and baking. When you dine at Nourish we want to give you an experience. Our Hāngī methods create a traditional and tender dish in a quarter of the time, using our special wood-fired technique which replicates the unique and wonderful taste of Hāngī.
